Cocoa Powder (unsweetened): Grams to Cups
1 cup of cocoa powder (unsweetened) = 85 grams
One US cup of cocoa powder (unsweetened) weighs 85 grams. One 250 ml metric cup — the one used in the UK, Australia, New Zealand and Canada — holds 90 grams. To convert any weight, divide the grams by the figure for your cup.
Unsweetened natural cocoa powder weighs about 85 g per cup — USDA FoodData Central lists 86 g, King Arthur Baking 42 g per ½ cup (84 g). Dutch-process cocoa weighs the same.
Light, lumpy and easy to over-measure
Cocoa powder is very fine and quite fatty (10–22% cocoa butter), so it clumps and compacts. A cup scooped from a packed tin can weigh 100 g or more. Sift or whisk it, spoon it into the cup and level it — or weigh it, especially for brownies, where too much cocoa gives a dry, bitter result.
One tablespoon is about 5.3 g; ¼ cup about 21 g.
Natural vs Dutch-process
Dutch-process cocoa is treated with an alkali to neutralise its acidity, giving a darker colour and milder flavour. By the cup the two weigh the same (USDA lists 86 g for both), but they are not always interchangeable: natural cocoa is acidic and reacts with baking soda, Dutch-process does not. Swap them only when the recipe uses baking powder, or adjust the leavening.
Replacing chocolate with cocoa
A common substitution for 1 oz (28 g) of unsweetened baking chocolate is 3 tablespoons (about 16 g) of cocoa powder plus 1 tablespoon (14 g) of butter or oil. That replaces the cocoa solids and the cocoa butter the chocolate would have contributed. Use Dutch-process or natural cocoa according to the leavening in the recipe.

How to measure cocoa powder (unsweetened) accurately
The 85 g figure assumes the spooned-and-levelled method: spoon the cocoa powder (unsweetened) into a dry measuring cup and sweep the top flat with a straight edge. Scooping the cup through the bag compacts it and gives a heavier cup.
