What to buy first, in order
- A digital scale that reads single grams and has a tare button. It removes the 20% flour variance, the packed-or-loose brown sugar question and the sticky honey cup all at once.
- An oven thermometer. Most domestic ovens are out by 10–20 °C, and until you know yours every bake time is a guess.
- Metal nested dry measuring cups and one clear jug. Plastic cups warp in a dishwasher, and a warped cup is an inaccurate cup.
- A bench scraper — levels dry cups, divides dough and cleans the worktop.
- Everything else. Stand mixers and fancy bakeware are lovely and none of them fix a measuring problem.
