Gluten-free flours have very different densities from wheat flour, making accurate conversion essential.

Why This Matters for GF Baking
You can't simply swap 1 cup of wheat flour for 1 cup of almond flour. The density difference means you'd get a completely different amount of actual flour. Always convert by weight:
If a recipe calls for 125g flour → use 125g of your GF flour
If a recipe calls for 1 cup AP flour → convert to 125g, then measure your GF flour to 125g
Common GF Flour Blends
Most GF baking uses a blend. A common ratio:
2 parts rice flour (316g)
⅔ part potato starch (128g)
⅓ part tapioca starch (40g)
This gives about 484g of blend, roughly equivalent to 3¾ cups.
Tips for GF Baking
Always weigh — GF flours vary more than wheat flour in density
Add xanthan gum — ½ tsp per cup of GF flour for structure
Rest the batter — 30 minutes helps GF flours absorb liquid
Expect different texture — GF baked goods are naturally denser
