A digital scale is the single best upgrade a home baker can make, and this page will still say so at the end. But plenty of people are standing in a kitchen right now with a recipe in grams and no scale in sight, and that is a solvable problem.

Start with the conversion, not the guesswork

Every gram amount has a cup equivalent, as long as you know what you are measuring. That is what the tables on this site are for.

Look the amount up rather than estimating it. Estimation is where the error comes from, not the cups themselves.

The spoon-and-level method

This is the whole technique for dry ingredients, and it is worth doing properly because it is the difference between 125 g and 150 g in the same cup.

Stir the flour in its container to loosen it.

Spoon it into the measuring cup — never drag the cup through the bag.

Use tablespoons for small amounts

A tablespoon is too small to pack badly, which makes it more reliable than a cup for anything under about a quarter cup. Sixteen tablespoons make a cup, so the arithmetic is easy.

So 40 g of cocoa powder is about 7½ tablespoons — awkward to say, easy to count out.

Packaging is a measuring device

Manufacturers print the net weight on the pack, which turns the pack itself into a scale.

Butter. A US stick is 113 g and the wrapper is marked in tablespoons. European blocks are usually 250 g and can be cut into quarters of 62.5 g by eye with reasonable accuracy.

Yeast. A standard packet is 7 g, about 2¼ teaspoons.

Water is your calibration tool

Water weighs almost exactly 1 gram per millilitre. That single fact solves every liquid measurement without a scale: 250 ml of water is 250 g, 100 ml is 100 g.

It works closely enough for milk (a little heavier, about 1.03 g/ml), stock, wine, juice and coffee. It does not work for oil (about 0.92 g/ml), honey (about 1.44) or syrup. Those need the grams to millilitres converter, which knows each ingredient's density.

The awkward cases, solved

Half an egg. Crack it, beat it until uniform, then take half by volume. A large egg is about 50 g shelled, or roughly 3 tablespoons beaten, so half is 1½ tablespoons.

Sticky things. Oil or spray the cup before you measure honey, syrup, molasses or nut butter, and it slides out cleanly instead of leaving a tenth of itself behind. For butter, the wrapper markings are more accurate than a cup.

Brown sugar. Press it firmly into the cup with the back of a spoon until it holds the shape of the cup when tipped out. That is "packed", and it is what recipes mean.

What you genuinely cannot do without a scale

Be honest about the limits.

Bread hydration. Baker's percentages are ratios of weights. There is no volume equivalent, and a 5% error in water changes the dough noticeably.

Laminated pastry. Croissants and puff pastry depend on precise butter-to-dough ratios.
