Dry and liquid measuring cups hold exactly the same volume. A US cup is 236.6 millilitres whichever one you pick up. Every article that tells you they hold different amounts has it wrong.
What differs is how they are designed to be filled — and that turns out to matter more than capacity ever could.
The design difference, and why it exists
A dry measuring cup is filled to the brim and swept flat with a straight edge. That is why dry cups come as nested sets with the measurement line at the very top rim: the rim is the measurement. You overfill deliberately, then scrape the excess off with the back of a knife.
A liquid measuring jug has its markings some way below the rim, with spare headroom above and a pouring spout. That headroom exists so you can carry a full cup of milk across a kitchen without wearing it.
Neither design is better. Each is built for the thing it measures.
What goes wrong when you swap them
The flour-in-a-jug error is the big one because it compounds. Two cups of flour measured that way can be half a cup over, which is enough to take a cake from tender to dry.
How to fill a dry cup properly
Fluff the flour first. It settles and compacts as it sits in the bag. Stir it with a fork or a whisk before you go near it.
Spoon it in. Use a spoon to transfer flour into the cup rather than dragging the cup through the bag. Scooping compacts.
Overfill slightly, so the flour heaps above the rim.
How to fill a liquid jug properly
Put it on a flat surface. Bend down so your eye is level with the marking. Pour until the bottom of the meniscus — the curve the liquid makes — sits on the line.
Reading a jug from above is the single most common liquid error, and it consistently over-pours, because you are looking at the far side of the curve.
For anything under about 60 ml, skip the jug entirely. The markings that low are decorative. Use measuring spoons: a tablespoon is 15 ml and a teaspoon is 5 ml.
The ingredients that break both systems
Some things simply do not measure well by volume in any cup.
Brown sugar is packed unless the recipe says otherwise. Packed is 220 g per cup; loosely spooned is about 170 g. That is a 23% swing and nothing about the cup tells you which one the recipe meant.
Sticky liquids — honey, golden syrup, molasses, treacle, nut butter — leave a meaningful amount behind in the cup. Oil the cup first, or weigh them.
What to actually own
If you are buying, get a nested set of dry cups in metal rather than plastic — plastic warps in a dishwasher and warped cups are inaccurate — plus one clear jug with both millilitre and fluid-ounce markings.
Then buy a digital scale as well. A basic one costs less than a decent set of cups and it removes every problem on this page at once: no levelling, no packing question, no meniscus, and one bowl to wash instead of five.
