Why the thirds are the awkward ones
A third of a cup is 5.33 tablespoons, which is why ⅓ and ⅔ cup measures exist as their own scoops rather than being counted out in spoons.
If you only have tablespoons, 5 tablespoons plus 1 teaspoon is the honest substitute for ⅓ cup, and 10 tablespoons plus 2 teaspoons for ⅔ cup. Rounding to 5 or 11 tablespoons introduces a 6% error, which in a small-batch recipe is enough to notice.
The measuring method changes the weight
Every gram figure above assumes flour and powders are spooned into the cup and levelled off with a straight edge. Scooping the cup directly through the bag compacts the flour and can add 15–20% to the weight.
That single difference is bigger than the difference between many recipes' success and failure, and it is the strongest argument for owning a scale.
