Scaling a recipe is mostly multiplication, and the multiplication is the easy part. What catches people out is the handful of things that do not scale — and those are almost always why a doubled cake comes out wrong.

What scales linearly

Nearly everything. Flour, sugar, butter, milk, eggs, chocolate, nuts, fruit, oil, vanilla — all of them double when the batch doubles, and halve when it halves.

The recipe scaler will take a pasted ingredient list and do this for the whole thing at once, which removes the most common failure mode: doubling the flour and forgetting the baking powder.

What does not

Pan size and baking time. These are the big ones, covered below.

Salt and spices. They scale arithmetically but not perceptually. A doubled heavily-spiced dish often reads as over-seasoned. Scale spices to about 1.75× when doubling, taste, and add the rest if it needs it. You can always add more.

Leavening at large multiples. Baking powder and bicarbonate scale fine for doubling. Above about 3× a batch they start to over-inflate, because a much larger mass of batter holds gas differently. Reduce the leavener by roughly 10% at that scale.

Depth is what changes the bake

This is the mechanism behind almost every scaling failure, and once you see it the rest follows.

Heat travels inward from the edges of a pan. A batter one inch deep sets in the middle long before one that is two inches deep. So a doubled recipe poured into the same tin does not take twice as long — it takes considerably longer, and by the time the centre is cooked the outside is dry.

The fix is to keep the depth the same. Use a bigger pan, or two pans, so the batter sits at the depth the recipe intended.

Adjusting the oven when depth does change

Sometimes you have one tin and no choice.

Deeper than intended: drop the oven by about 15 °C (25 °F) and expect a significantly longer bake. The lower temperature stops the outside overcooking while the centre catches up.

Shallower than intended: keep the temperature but start checking 20–25% earlier. Thin layers go from done to dry very quickly.

Halving a recipe

The awkward parts are eggs and small quantities.

One egg. Beat it until the yolk and white are completely combined, then use half — 25 g, or about 1½ tablespoons for a large egg. The other half keeps for a couple of days.

Small measures. Half a quarter-teaspoon is an eighth, and you probably do not own that spoon. Fill a quarter teaspoon and divide it with a knife tip, or weigh it. For baking soda at this scale, weighing genuinely matters.

Converting to grams first

The single best move when scaling is to convert the recipe to grams before you multiply.

Halving "2⅔ cups" requires thought. Halving 333 g does not. Multiplying 125 g by 1.5 is instant; multiplying "1 cup plus 2 tablespoons" by 1.5 is a small puzzle you can get wrong.

The recipe scaler will convert an entire list to grams and scale it in one step. Once you have the gram version, write it in the margin — you will never have to do it again.

Scaling for a crowd

Work out the servings you need, divide by what the recipe makes, and that is your factor.

Above about 4×, make separate batches. Mixers have capacity limits, ovens have shelf limits, and dough that sits waiting develops while it waits.

Write the scaled list down before you start. Doing arithmetic mid-cook with wet hands is how a batch gets ruined.

What resists scaling

Some things are not about amounts at all.

Custards and curds depend on surface area for heat transfer. A doubled batch in the same pan takes far longer and is much more likely to scramble.

Caramel depends on evaporation rate. A doubled batch in the same pan behaves differently and needs a wider pan, not a longer cook.
